I often think what an amazing job I have. Imagine a little princess on her birthday getting the cake she has always dreamed of, the little prince, or for that matter the man, getting the car of his dreams. To be given the privilege of making others happy is a great honour and I remind myself of it every time I complete an order.
The immediate reaction from my customers is fantastic. It warms my heart whenever someone tells me that this was absolutely the best and most delicious cake they have ever had. After all these years it reinforces my belief that, as far as possible, you will only find the most natural ingredients available in my cakes. Real cream, butter, sugar, honey, marzipan and almond paste all made using the best raw materials.
I am commissioned to make my cakes look like no other cakes, but as an extra bonus I want to excite the taste buds too- not just the eyes. Because, as we all know we eat with our eyes, but if the taste does not live up to our expectations, we will quickly forget what tempted our eyes in the first place.
When I lived in London I was invited to a party where the most spectacular cake I have ever seen was served. But oh, how disappointed I was when I tasted it. I often say that our Swedish sponge cake is a dream in comparison. It was at that moment I decided. My cakes will not just please the eye - they will taste wonderful too. That is the only way to remember the cake and also the occasion when you had it.
